When I need a fast, comforting dinner that still feels homemade, this Chicken Noodle Stir-Fry is one of my absolute favorites. It’s packed with tender chicken, colorful veggies, and savory-sweet flavors that come together in under 30 minutes. This is the kind of recipe that saves busy weeknights while still nourishing your body.

What I love most about this stir-fry is how flexible it is. You can swap the noodles, adjust the spice, or use whatever vegetables you already have on hand. Simple ingredients, bold flavor, and no stress — just the way cooking should be.

This easy chicken noodle stir-fry recipe is perfect for quick dinners, meal prep, or leftovers for lunch the next day.


Ingredients

  • 400g chicken breast, sliced
  • 2 tsp sesame oil
  • ½ tsp salt
  • Black pepper, to taste
  • Paprika, to taste
  • 1 tbsp minced garlic
  • ¼ cup green onions
  • 1 small white onion, sliced
  • 1 small red bell pepper, sliced
  • ½ cup shredded carrots
  • 170g cooked noodles (I used linguine)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp hot sauce (adjust to taste)
  • 2 tsp honey1 tbsp sweetener of choice

Optional toppings: sliced green onions & sesame seeds

How to Make Chicken Noodle Stir-Fry:

  1. Heat a large pan or wok over medium-high heat.
  2. Season chicken with sesame oil, salt, pepper, and paprika. 
  3. Cook until golden and fully cooked. 
  4. Remove and set aside.
  5. In the same pan, sauté garlic, white onion, bell pepper, and carrots until slightly tender.
  6. Add cooked noodles and gently toss with the vegetables.
  7. Stir in soy sauce, hot sauce, honey, and sweetener.
  8. Return chicken to the pan and toss everything together until heated through.
  9. Garnish with green onions and sesame seeds if desired.


Serving Tip:

This dish is delicious on its own or paired with a simple side salad. 

It also reheats beautifully for next-day lunches.
